I love coffee.  And I need my daily dose (or twelve) to get through the day productively and without violating the fifth commandment.  Thanks be to God, I have gradually won Dave over to the black brew, although it took many years of hard work and persistence, and now we have turned that morning drink into an experimentation and adventure to find the best out there.

So when Katie told me about her recipe for healthy coffee, I knew we had to try it.  I mean, getting health benefits from our favorite treat?  Sign me up, please!

We finally made the coffee this morning.  Bliss.

At first, I was worried that it might be a longer process than just brewing and serving and drinking a regular cup of joe, but this recipe did not take long at all.  The stevia sweetens the dark coffee, and the coconut oil adds so much healthy fat goodness, plus it tastes wonderful!  The butter (I know, sounds crazy, but most brilliant ideas do…) just makes it creamy and frothy (and again, another source of healthy fat).  I urge you to try it- it’ll leave you craving more, but not needing more, because it will keep your energy levels up all the live long day.

First, brew a pot of coffee (the recipe calls for organic coffee because obvi it’s healthier; but we didn’t have any, so we rolled with it…).

Next, mix the coffee with the coconut oil, vanilla extract, stevia, and butter in the blender.

Let ‘er rip until all the ingredients are blended.

Pour the goodness into your favorite mug.

Enjoy.  And yes, it tastes as pretty as it looks.

Katie is right when she says no other coffee will ever do once you’ve tried this blend.  It’s true.  Dave and I both enjoyed it, and I can’t wait for tomorrow’s batch!  And if the butter freaks you out, then ease your way into it.  I actually forgot to put the butter in at first, and the coffee was still delicious without it.  But I will say that when we added the butter, the smooth texture it brings will make you want to add a whole stinking stick (but don’t).
