We are in full holiday baking mode here, and I’m throwing together some family favorites for Christmas Eve like pecan pie, Christmas coffee, and puppy chow.

Puppy chow reminds me of sitting on my grandma’s sofa while watching my cousins wrestle and playing referee. I don’t know why. Maybe I was eating the puppy chow while watching? Regardless, it brings back some fun and fond memories.

This year, I wanted to spruce up our basic puppy chow recipe and make it a bit more festive. This mint chocolate puppy chow is made with peppermint essential oil and is disgustingly easy to make. It requires few ingredients and is ready to devour in 15 minutes. Chances are it will take even less time for it to disappear.

  • 1 cup melting chocolate (I prefer dark)
  • 1 cup peanut butter (can substitute with almond butter)
  • 1/2 cup butter (one stick)
  • 8-10 drops peppermint essential oil
  • 7 cups Rice Chex Mix
  • powdered sugar to liking (I use about a cup)
  • M&Ms (optional)

Instructions

  1. In a double broiler, melt chocolate, peanut butter, butter, and essential oil together until smooth.
  2. Place Chex Mix in a paper bag and pour mixture over top. Shake to coat. You can also just toss in a bowl; although a bit trickier and messier, this is what I always do because I hardly ever have a paper bag on hand.
  3. Let cool for a few minutes.
  4. Sprinkle powdered sugar and shake to coat to your liking.
  5. If using, stir in M&Ms. Enjoy!
