Are you a breakfast person?  We all know that breakfast is the most important meal of the day, but do you enjoy it?

My hubby loves breakfast and would willingly give up all other snacks and meals so long as he could start his morning off with a big plate of goodness.  I, on the other hand, went days and days without eating breakfast in high school simply because I didn’t want to take the time to make food before I left for school (lazy).

So let’s be honest.  It’s not always easy to whip up a filling bfast quickly when you’re on-the-go (which for most of us is every single day).  And I, for one, am much more likely to eat a good breakfast if it is delicious, fast, and sweet.

Insert breakfast cookies.  Oh yeah, cookies for breakfast.  You’ve probably come across my inspiration on Pinterest before.  These cookies are flour free and sugar free, and are full of good-for-you ingredients.

I took the suggested recipe and tweaked a few details, changing certain measurements and adding more ingredients to boost the protein content of the cookies, which will keep you fuller, longer and to add good fats into the equation.  And they are delicious.

Without further ado…

 Breakfast Cookies

Ingredients:
  • 2 ripe bananas, mashed
  • 1/3 cup of creamy peanut butter
  • 2/3 cup of unsweetened applesauce
  • 1/4 cup of vanilla or chocolate protein powder (I use chocolate, hence the darker color of the cookies; and I use Zija Pr1me90 protein mix because that’s what we use regularly in our house)
  • 1/4 cup of coconut oil (optional)
  • 2 tablespoons of chia seeds (optional)
  • 1 teaspoon of vanilla extract
  • 2 packets of stevia (for kicks/optional)
  • 1 1/2 cups of quick oats (uncooked)
  • 1/8 cup of chopped walnuts (optional)
  • 1/8 cup chopped almonds (optional)
  • 1/4ish cup of chocolate chips (optional) (I use Ghiradelli dark chocolate chips)
What to do:
  1. Preheat oven to 350.
  2. In a large bowl, mix mashed bananas and peanut butter together until combined well.
  3. Add applesauce, protein powder, coconut oil, chia seeds, vanilla extract, and stevia and mix until combined.
  4. Then, stir in oats, walnuts, almonds, and chocolate chips.
  5. Let dough sit for 10 minutes.
  6. Drop dough onto cookie sheet by the spoonful.  Flatten circular cookies.
  7. Bake for about 20-30 minutes.  They’ll start to get golden, or you’ll do what I do and know when they’re done by the smell.
  8. Let sit for about 5 minutes, then have at it!
